All Bran: One of my all time favourite breakfast cereals. I would eat it every single day but I already get a lot of fibre in my diet, and I don’t think my digestive system would thank me :p
Porridge Oats: Perfect for a quick and easy warm breakfast or mixed into smoothies.
Muesli: I will never get bored of muesli, there are endless variations. I’m looking forward to creating my own mix when this stuff is used up.
Seed mix: I eat these with raisins and nuts; mixed into porridge; sprinkled over salads. Soooo good, and rich in Omega 3 :)

Broccoli and Cheese Mini Egg Omelets
Gina’s Weight Watcher Recipes
Servings: Makes 9 cupcakes  Old Points: 2 pts each • Points+: 2 pts each
Calories: 103.9 • Fat: 6.5 g  Carbs: 2.7 g • Fiber: 1.2 g  Protein: 8.7 g

Ingredients: 

  • 4 cups broccoli florets
  • 4 whole eggs
  • 1 cup egg whites
  • 1/4 cup reduced fat cheddar
  • 1/4 cup good grated cheese like pecorino romano
  • 1 tbs olive oil
  • salt and fresh pepper
  • cooking spray


Directions: 
Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes.
When broccoli is cooked, mash into smaller pieces and add olive oil, salt and pepper.Mix well.

Spray cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.

In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4 full. Top with grated cheddar and bake in the oven until cooked, about 20 minutes. Serve immediately. Wrap any leftovers in plastic wrap and store in the refrigerator to enjoy during the week.

Once again!

I am back. Again, trying to lose around half a stone.

Today I am feeling so motivated and I have even planned my weekend away food intake. Next week I am going to start going to the gym before work again. I feel so flabby right now! 

Today I have eaten:

B: Croissant (Not the healthiest choice I know, but I go away tomorrow so didn’t go food shopping) and a cuppa

L: Shepherd’s pie. (Low fat)

D: Haddock with rice and vegetables.

Snacks were pineapple and a fun sized milky way.
